Ingredients

Eggs
  • 12 large eggs Use large eggs.
Deviled egg filling
  • 0.5 cup mayonnaise For a creamy, smooth yolk mixture.
  • 0.25 cup dill pickles, finely minced Finely mince so the filling stays smooth.
  • 2 tbsp dill pickle juice Adds tang and helps loosen the yolk for piping.
  • 1 tsp Dijon mustard For sharp flavor and light emulsification.
  • 1 tbsp fresh dill, chopped Chop fresh dill fronds for the filling.
  • 0.25 tsp garlic powder Adds savory depth without heat.
  • 0.125 tsp salt Balances the tang.
Garnish
  • 1 Small pickle slices Use tiny slices for topping.
  • 1 dill fronds Fresh fronds for a green garnish.

Equipment

  • 1 Dutch oven

Method

Boil and chill the eggs
  1. Place the large eggs in a pot, cover with cold water, and bring to a boil. Cover the pot, remove from heat, and let stand 12 minutes.
  2. Chill the eggs in an ice bath for 10 minutes. Peel the eggs and halve lengthwise.
Make the deviled filling
  1. Mash the yolks with mayonnaise, dill pickle juice, Dijon mustard, fresh dill, garlic powder, and salt until smooth. Mix thoroughly for a creamy texture.
  2. Fold in the minced dill pickles. Stir until evenly distributed.
Fill and garnish
  1. Spoon or pipe the filling into the egg whites. Fill each half generously.
  2. Top each deviled egg with a small pickle slice and a dill frond. Serve immediately or chill until ready to plate.

Notes

For the cleanest piping, mash the yolks until very smooth before adding the minced pickles; if the filling feels too thick, add a little more dill pickle juice by the teaspoon. Store covered in the refrigerator for up to 3 days. Freezing is not recommended due to texture changes. For a lower-fat option, use light mayonnaise (texture will be slightly softer but still works).
