Ingredients

Blueberries
  • 2 cup fresh blueberries Use fresh blueberries for a firm, bright canton.
Strawberries
  • 2 lb fresh strawberries Hull and halve lengthwise; cut-side down for crisp red stripes.
Bananas
  • 3 medium bananas Slice into rounds and keep them from browning with lemon juice.
Lemon juice
  • 1 tbsp lemon juice Brush on banana slices right after slicing.

Equipment

  • 1 sheet pan

Method

Build the flag tray
  1. Choose a large rectangular serving tray or cutting board and place it on a flat surface so you can work in straight rows.
  2. In the upper left corner, arrange a dense rectangle of blueberries to form the canton (star field).
Add red stripes
  1. Starting from the top right of the tray and working left from the blueberry section, lay rows of halved strawberries cut-side down to form the red stripes.
  2. Press the strawberry rows close together so the red stripes stay clean and aligned.
Add white stripes
  1. Brush banana slices with lemon juice to prevent browning, then arrange them in rows between the strawberry stripes to create the white stripes.
  2. Continue alternating strawberry and banana rows across the full length of the tray, keeping the rows tight for a flag look.
Serve or chill
  1. Serve immediately for the crispest texture, or refrigerate uncovered for up to 1 hour before serving.

Notes

Pro tip: slice and arrange the bananas only when you’re ready to place them, and keep the rows tight against the blueberries so the flag pattern stays sharp. Refrigerate uncovered for up to 1 hour; do not freeze—bananas turn watery after thawing. For a dietary swap, use a dairy-free alternative topping is not needed here, but you can add a handful of chopped mint or swap berries for other red fruit while keeping the same layout.
