  • 1.5 lb chicken breasts cut into 1.5-inch chunks
  • salt to taste
  • pepper to taste
  • garlic powder to taste
  • 1 tbsp olive oil
Bang bang sauce
  • 0.5 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp lime juice
Garnish and serving
  • sesame seeds for garnish
  • green onions sliced, for garnish
  • lime wedges for serving

Method
 

Make the bang bang sauce and marinate
  1. Whisk mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth, then reserve half for drizzling and marinate the chicken in the other half for 20 minutes. The sauce should look glossy and coral before it coats the chicken pieces.
  2. Season the chicken with salt, pepper, and garlic powder, then toss to coat evenly with the marinating sauce. Make sure every chunk has a thin, even layer of sauce for better caramelization.
Skewer and grill
  1. Soak wooden skewers in water for 30 minutes, then thread the chicken onto them. You should see the skewers hold the chunks snugly with small gaps for even charring.
  2. Preheat the grill to medium-high and oil the grates, then place the skewers on the grill. Grill for 5-6 minutes per side until char marks form and the internal temperature reaches 165°F.
Finish and serve
  1. Remove the skewers from the grill and drizzle generously with the reserved bang bang sauce. The surface should turn sticky-glossy as the sauce warms and drips.
  2. Garnish with sesame seeds and sliced green onions, then serve with lime wedges. Finish with a bright squeeze of lime right before eating for extra lift.

Pro tip: keep the chicken chunks close to 1.5 inches so they cook evenly at 165°F without drying out. Store leftovers in an airtight container in the fridge up to 3 days; rewarm gently and add a fresh drizzle of reserved sauce. Freeze chicken skewers only if you fully cook them first; sauce may separate after thawing, so stir it well. For a lighter option, use light mayonnaise in the bang bang sauce.
