Ingredients
  

Salmon
  • 1.5 lb salmon fillet skin removed, cut into 1.5-inch cubes
Seasoning
  • 0.25 tsp salt to taste
  • 0.25 tsp pepper to taste
  • 0.5 tsp garlic powder to taste
  • 0.5 tsp smoked paprika to taste
Crisp & Cook
  • 2 tbsp olive oil
Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp lime juice
Garnish
  • 2 tbsp sesame seeds for garnish
  • 2 tbsp green onions sliced, for garnish

Method
 

Season the salmon
  1. Pat the salmon cubes completely dry, then season with salt, pepper, garlic powder, and smoked paprika to taste.
Make the bang bang sauce
  1. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice, then reserve 1/3 for serving.
Cook crispy salmon bites
  1. Heat the olive oil in a large non-stick skillet over medium-high heat until shimmering.
  2. Add salmon bites in a single layer and cook for 2-3 minutes per side without moving until golden and crispy, working in batches.
Toss and serve
  1. Remove from heat and immediately toss the warm salmon in the bang bang sauce until coated.
  2. Transfer to a serving plate, drizzle with the reserved sauce, and top with sesame seeds and sliced green onions.

Notes

For the crispiest caramelized edges, keep the salmon cubes dry and avoid moving them while they cook (cook in batches so the pan stays hot). Store leftovers in an airtight container in the fridge up to 2 days; reheat in a skillet over medium until warmed through, noting the coating may soften. Freezing isn’t recommended for best texture. For a lighter option, swap mayonnaise with light mayonnaise (measure the same) and keep the rest of the sauce unchanged.
