Ingredients

Sandwiches
  • 8 bread Bread slices, such as sandwich-style white or sourdough.
  • 8 cheese (American, cheddar, or Swiss) Use slices so they melt evenly and form a stretchy center.
  • 4 tbsp butter, softened Soften for easy, generous spreading.

Equipment

  • 1 cast iron skillet

Method

Build the sandwiches
  1. Butter one side of each bread slice generously so the outside will brown evenly over heat.
  2. Place cheese between two slices of bread, keeping the buttered sides on the outside for a sealed, melty center.
Grill and melt
  1. Place the sandwiches on a campfire grate or in a cast iron skillet over medium heat.
  2. Cook for 4-5 minutes per side until the bread is golden brown and the cheese is fully melted.
Serve
  1. Remove from heat, cut in half, and serve hot while the cheese is molten.

Notes

Pro tip: Use good-quality sliced cheese and keep the heat at medium so the bread browns without scorching before the cheese melts. Store leftovers in the fridge up to 3 days; reheat in a skillet over medium-low until hot. Freezing is not recommended because the bread texture softens. Dietary swap: use gluten-free bread and gluten-free cheese slices for a gluten-free version.
