Ingredients
  

For crust
  • 2 cup graham cracker crumbs
  • 0.33 cup sugar
  • 0.5 cup melted butter
For cheesecake filling
  • 16 oz cream cheese
  • 0.5 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 0.25 cup sour cream
For apple topping
  • 3 apples
  • 3 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp butter
For streusel
  • 0.5 cup flour
  • 0.33 cup brown sugar
  • 1 tsp cinnamon
  • 3 tbsp cold butter
For caramel drizzle
  • 0.5 cup caramel sauce

Method
 

Prepare the pan and crust
  1. Preheat the oven to 325°F and line a 9x13 pan with parchment paper.
  2. Press the graham cracker crumb crust into the bottom of the lined pan, then bake for 8 minutes.
Add cheesecake filling and apples
  1. Beat the cream cheese filling until smooth, then pour it over the hot crust.
  2. Cook the diced apples with butter, brown sugar, and cinnamon for 5 minutes, then scatter them over the cheesecake.
Finish and bake
  1. Make the streusel by mixing flour, brown sugar, cinnamon, and cold butter, then scatter it over the apples.
  2. Bake for 35 to 40 minutes, until the center is just set, then cool completely.
  3. Refrigerate for 3 hours to fully chill and firm up the bars.
Serve
  1. Drizzle the caramel sauce over the bars before serving.

Notes

For the cleanest slices, cool the bars completely after baking, then chill the full 3 hours before cutting. Refrigerate leftovers in a covered container for up to 4 days; freeze up to 2 months for best texture. For a lighter option, use low-fat cream cheese and substitute 1 egg white for one whole egg (bars may be slightly softer).
