Make the cheesecake dip base
- Beat the softened cream cheese until completely smooth, scraping the bowl as needed for no lumps. This should take about 2 minutes and look thick and creamy before adding the dry ingredients.
- Add powdered sugar, vanilla extract, cinnamon, and nutmeg, then beat until fluffy. Keep beating until the mixture lightens noticeably and the spices are fully incorporated.
- Fold in the thawed whipped topping until no streaks remain. Stop as soon as it looks uniform and airy.
Chill and top
- Spread the mixture into a serving bowl and refrigerate for 1 hour, uncovered or lightly covered. The dip should firm up slightly while staying scoopable.
- Before serving, drizzle caramel sauce over the top in a swirl pattern. The caramel should sit on top in glossy ribbons, not sink in.
- Scatter the crushed graham crackers over the surface. The crumbs should look evenly scattered across the caramel and cream layer.
Serve
- Serve with apple slices, pretzels, and extra graham crackers for dipping. Arrange around the bowl so everything is easy to grab for each bite.

Pro tip: soften the cream cheese fully at room temperature so it beats smooth without lumps. Refrigerate leftovers in an airtight container for up to 3 days; the caramel topping may darken slightly. Freezing isn’t recommended due to texture changes from the whipped topping. For a lighter swap, use light whipped topping (or whipped cream) in the same amount.
