Make the apple pie filling
- Cook the diced apples with butter, brown sugar, cinnamon, nutmeg, and cornstarch over medium heat for 5-7 minutes, stirring, until thickened and glossy.
- Transfer the filling to a bowl and cool completely before assembling.
Assemble and coat the bombs
- Preheat the oven to 375F and line a baking sheet with parchment.
- Separate the refrigerated biscuit dough and flatten each piece into a 4-inch circle.
- Place 1 tablespoon of cooled apple filling and 1 soft caramel candy in the center of each circle.
- Wrap the dough around the filling and pinch firmly to seal, then roll into a smooth ball.
- Brush each ball with melted butter and roll in cinnamon sugar coating.
Bake and finish
- Bake at 375F for 18-20 minutes until deeply golden and set through.
- Drizzle with caramel sauce and serve warm.
Notes
Cool the apple filling completely so the caramel-stuffed centers don’t leak during baking. Store leftovers in an airtight container in the fridge for up to 3 days, reheat in a 350F oven until warm. Freezing is yes—freeze baked, cooled bombs in a single layer, then thaw and reheat. For a lighter option, use reduced-fat biscuit dough and a sugar-light caramel sauce if desired.
