Ingredients

Carbonara deviled eggs
  • 12 large eggs
  • 3 oz pancetta or guanciale finely diced
  • 0.3333333333 cup mayonnaise
  • 0.25 cup finely grated Pecorino Romano plus more for shaving
  • 1 tsp Dijon mustard
  • 1 clove garlic small, grated
  • 0.5 tsp coarsely cracked black pepper plus more for topping
  • 1 fresh parsley for garnish

Equipment

  • 1 sheet pan

Method

Boil and chill the eggs
  1. Place the eggs in a pot, cover with cold water, and bring to a boil; cover and remove from heat, then let stand 12 minutes. Keep the pot covered during the stand time for evenly set yolks.
  2. Chill the eggs in an ice bath for 10 minutes, then peel and halve lengthwise. The rapid cooling helps the yolks stay creamy and easy to mash.
Make the carbonara yolk filling
  1. Cook the pancetta (or guanciale) for 6-8 minutes until crispy, then drain, reserving 1 teaspoon of the fat. Drain on a lined sheet pan to prevent sogginess.
  2. Mash the yolks with mayonnaise, Pecorino Romano, Dijon mustard, grated garlic, cracked black pepper, and the reserved pancetta fat until smooth. Mash thoroughly until the filling is thick and pipeable.
Fill and finish
  1. Pipe (or spoon) the filling into the egg white halves. Fill each well generously for a neat, domed top.
  2. Top with crispy pancetta, shaved Pecorino Romano, cracked pepper, and parsley. Finish right before serving so the pancetta stays crisp.

Notes

For the smoothest filling, mash the yolks while they’re still warm after peeling, and use enough reserved pancetta fat to loosen to a pipeable consistency. Store covered in the refrigerator up to 3 days; for best texture, garnish with parsley and extra Pecorino just before serving. Freezing isn’t recommended for deviled eggs. Dietary swap: use an olive-oil mayonnaise alternative for a dairy-free version while keeping the flavor profile.
