Ingredients
  

Cheddar Bacon Turkey Melt on Sourdough
  • 8 sourdough bread
  • 12 oz sliced deli turkey breast
  • 8 thick-cut bacon, cooked and crispy
  • 8 sharp cheddar cheese
  • 4 tbsp unsalted butter, softened
  • 4 tbsp Dijon mustard
  • 4 tbsp mayonnaise
  • 1 cup arugula or mixed greens
  • 8 ripe tomato
  • 0.25 tsp Salt and pepper to taste

Method
 

Crisp the bacon
  1. Cook the bacon until crispy, then drain and set aside so it stays crunchy.
Prep the bread and spreads
  1. Spread the softened butter on one side of each sourdough slice.
  2. Flip the bread over and spread Dijon mustard on half the slices and mayonnaise on the other half.
Assemble the melts
  1. Layer the deli turkey, crispy bacon, and sharp cheddar on top of the Dijon-mustard side.
Griddle until golden and melted
  1. Heat a skillet or griddle over medium heat and place the sandwiches butter-side down.
  2. Top each sandwich with the mayonnaise-spread slice butter-side up.
  3. Cook 3-4 minutes per side, until the bread is golden and the cheddar is fully melted.
Finish with greens and tomato
  1. Open each sandwich and add arugula or mixed greens and tomato slices, then press closed and serve.

Notes

For the crispiest melt, drain bacon well and cook the sandwiches on medium heat so the bread browns before the cheese over-melts. Store leftovers in the refrigerator up to 2 days; reheat in a skillet until warmed and re-crisped. Freezing is not recommended because the tomato and greens lose texture after thawing. If you want a lighter option, use reduced-fat cheddar and mayonnaise.
