Toast and soften the chiles
- Toast the dried guajillo and ancho chiles in a dry skillet for 30 seconds per side, just until fragrant, then transfer to a bowl.
- Soak the toasted chiles in boiling water for 15 minutes until softened, then drain.
Blend the chile sauce
- Blend the softened chiles with the diced tomatoes, quartered onion, garlic, beef broth, apple cider vinegar, cumin, oregano, smoked paprika, and cinnamon until smooth.
- Season the beef with salt and pepper to taste.
Slow-cook until fall-apart tender
- Place the seasoned beef into the Crockpot and pour the chile sauce over so the meat is mostly submerged.
- Cook on Low for 7–8 hours, until the beef is fall-apart tender.
Shred and assemble dip-and-griddle tacos
- Shred the beef directly in the consomé until evenly pulled and coated.
- Dip corn tortillas in the consomé, fill with the shredded beef and shredded Oaxaca or mozzarella, then griddle until crispy.
- Serve with extra consomé for dipping, plus diced onion, cilantro, and lime on the side.
