Ingredients
  

Hot dogs and buns
  • 8 beef hot dogs Spiral-score for char and split-open grilling.
  • 8 hot dog buns Toasted on the grill after buttering.
  • 2 tbsp butter Softened for easy spreading in the buns.
Spicy toppings
  • 0.5 cup jalapeño relish Or use chopped pickled jalapeños if preferred.
  • 0.25 cup yellow mustard Squeezed into the assembled buns.
  • 2 tbsp sriracha Drizzled for heat and color.
  • 0.25 cup crispy fried onions Sprinkled on top for crunch.
  • ketchup Serve on the side for dipping.

Method
 

Score and grill the hot dogs
  1. Score each hot dog with diagonal cuts or a spiral cut to help them char and open on the grill.
  2. Preheat the grill or grill pan to medium-high heat, then cook the hot dogs for 8–10 minutes, turning frequently, until charred and split open slightly.
Toast the buns
  1. Butter the inside of each bun and toast on the grill for 1–2 minutes until golden.
Assemble the firecracker hot dogs
  1. Place a hot dog in each toasted bun and top with jalapeño relish.
  2. Add a squeeze of yellow mustard to each hot dog for a tangy layer.
  3. Drizzle sriracha over the tops for the signature firecracker heat.
  4. Finish with crispy fried onions and serve immediately with ketchup on the side.

Notes

Pro tip: score deeper grooves on the spiral so the hot dog splits more evenly and catches more grill char. Refrigerate leftovers in a sealed container up to 3 days (assemble just before serving for best texture). Freezing isn’t recommended for the fully assembled hot dogs, but you can freeze cooked hot dogs separately and reheat gently. For a lighter option, use chicken or turkey hot dogs and reduce sriracha to 1 tbsp while keeping the jalapeño relish and fried onions.
