Method
 

Sear the chicken

Caramelize apples and aromatics
  1. Sauté shallots and apple slices over medium-high heat for 4-5 minutes until golden. Add garlic and fresh thyme and cook 1 minute, stirring, until fragrant.
Build the cider-Dijon sauce
  1. Deglaze the pan with apple cider and cook for 2 minutes, scraping up the browned bits. Add chicken broth and Dijon mustard and stir to combine.
Braise
  1. Return the chicken skin-side up to the pot, cover, and simmer over gentle heat for 20 minutes until the chicken is cooked through. Keep the lid on to trap steam for tenderness.
Finish the sauce
