Hobo Dinner Cheeseburgers

Hobo dinner cheeseburgers are easy foil packet burgers with thin patties, sliced potatoes and vegetables, and melted American cheese. You cook everything in sealed heavy-duty foil over medium heat, then open packets for cheesy, steamy results.

Ingredients
  

Ground beef
  • 1 lb ground beef
Seasoning
  • 0.25 salt and pepper to taste Use enough to season the beef and vegetables.
Cheese
  • 4 American cheese Slice for topping the burgers after cooking.
Potatoes and vegetables
  • 2 potatoes Thinly sliced so they cook through in the packet.
  • 1 onion Sliced.
  • 1 bell pepper Sliced.
Butter
  • 4 tbsp butter Portion butter into each packet for browning and moisture.
Foil
  • 4 heavy-duty aluminum foil Use one sheet per packet.

  • 1 sheet pan
  • 1 Dutch oven

Method
 

Make the patties and prep foil packets
  1. Divide the ground beef into 4 portions and form into thin patties, seasoning with salt and pepper.
  2. On each foil sheet, layer the thinly sliced potatoes, sliced onion, and sliced bell pepper.
  3. Place one burger patty on top of the vegetables and add 1 tbsp butter to each packet.
  4. Fold the foil into sealed packets so the contents are enclosed.
Cook over campfire heat
  1. Place packets on a campfire grate over medium heat for 20-25 minutes, flipping halfway so they cook evenly.
  2. When time is up, carefully open packets (avoid steam) and add cheese slices to the burgers, then reseal briefly.
  3. Let packets sit 5 minutes to cool slightly before serving directly from the foil.

Notes

Pro tip: Keep the patties thin and the potato slices very thin for faster, even cooking inside the foil. Store leftovers in the refrigerator up to 3 days; reheat until hot. Freezing is not recommended because the potatoes soften after thawing. For a lighter option, use reduced-fat American cheese.
