Ingredients

goat cheese
  • 8 oz goat cheese softened
  • 4 oz cream cheese softened
  • 2 tbsp milk
apricot honey topping
  • 0.33 cup apricot preserves
  • 2 tbsp honey
crunchy garnish
  • 0.25 cup dried apricots, finely chopped
  • 2 tbsp pistachios, chopped
  • 1 tsp fresh thyme leaves
  • 1 flaky sea salt pinch
serving
  • 1 crackers or crostini

Equipment

  • 1 hand mixer

Method

Make the creamy base
  1. Beat the goat cheese, cream cheese, and milk until light and smooth, using a hand mixer at medium speed.
  2. Spread the mixture into a shallow serving bowl and make a swirl in the center so the topping pools slightly.
Warm the apricot honey
  1. Warm the apricot preserves with the honey for 20-30 seconds and stir until the mixture loosens and flows.
Assemble and serve
  1. Spoon the apricot honey over the goat cheese, letting it drape into the center swirl.
  2. Top with the chopped dried apricots, pistachios, thyme, and a pinch of flaky sea salt for a crunchy, herb-fresh finish.
  3. Serve immediately with crackers or crostini.

Notes

For the smoothest spread, let the goat cheese and cream cheese sit at room temperature until very soft before beating. Refrigerate leftovers in an airtight container for up to 3 days; note the texture may firm slightly, so let it sit 10 minutes before serving. Freezing isn’t recommended because dairy spreads can grain after thawing. Dietary swap: use lactose-free cream cheese and milk to make it lactose-reduced while keeping the same creamy texture.
