Ingredients

Goat cheese log base
  • 10 oz goat cheese log Chilled.
  • 4 oz cream cheese Softened.
Bacon coating
  • 6 slices bacon Cooked crisp and finely chopped.
  • 1 tbsp fresh chives Chopped.
  • 1.5 oz pecans Toasted and finely chopped.
  • 0.25 cup dried cranberries Chopped.
Serve and finish
  • 2 tbsp hot honey or regular honey
  • 1 crackers for serving For serving.

Equipment

  • 1 stand mixer

Method

Make the cheese log
  1. Beat the goat cheese log and cream cheese in a stand mixer until smooth, then shape into a log.
  2. Wrap the log tightly in plastic wrap and chill for 30 minutes until firm (no baking needed).
Coat and assemble
  1. On a plate, combine the bacon, pecans, cranberries, and chives into an even coating.
  2. Roll the chilled cheese log in the mixture, pressing firmly so it coats on all sides.
  3. Transfer to a serving board and drizzle with honey over the coated log.
  4. Slice the log and serve with crackers.

Notes

For the cleanest slices, keep the log chilled until right before serving, and use a thin, sharp cut for the reveal of the creamy center. Store covered in the refrigerator up to 3 days; freezing is not recommended because the coating and honey finish can soften after thawing. Swap to dairy-free cream cheese and a dairy-free goat-style cheese log if you need a lactose-free option (texture will be slightly softer).
