Ingredients

  • 5 peaches ripe, pitted and sliced
blueberries
  • 1 cup blueberries
raspberries
  • 1 cup raspberries
strawberries
  • 1 cup strawberries hulled and sliced
watermelon
  • 1 cup watermelon cubed
honey
  • 3 tbsp honey
lime juice
  • 2 tbsp lime juice fresh
lime zest
  • 1 tsp lime zest packed
vanilla extract
  • 0.25 tsp vanilla extract
fresh mint leaves
  • 0.5 cup fresh mint leaves for garnish

Method
 

Mix the fruit
  1. Slice the peaches and place them in a large serving bowl with the blueberries, raspberries, strawberries, and watermelon. Keep the mix level so the fruit tosses evenly.
Make the honey-lime dressing
  1. Whisk together honey, lime juice, lime zest, and vanilla extract until smooth. Stop when the dressing looks glossy and fully blended.
Toss and chill
  1. Drizzle the honey-lime dressing over the fruit and gently toss until every piece looks lightly coated. You should see a sheen on the peach slices and berries.
  2. Taste the salad and add more honey or lime juice as desired. Mix gently again so the added flavor distributes.
  3. Refrigerate for 20 minutes to let the flavors meld. Cover once chilled so the fruit stays fresh and glossy.
Serve
  1. Garnish with fresh mint leaves just before serving. Scatter the leaves so they’re visible across the top.

Notes

Pro tip: slice peaches right before assembling so they stay juicy but not watery. Store covered in the refrigerator up to 2 days; the texture softens after that. Freezing is not recommended because berries and watermelon break down. For a lower-sugar option, replace honey with 3 tbsp agave or a comparable liquid sweetener and taste to balance the lime.
