Method
 

Season and build the curry base
  1. Season chuck roast generously with salt and pepper.
  2. Whisk coconut milk, diced tomatoes, red curry paste, garlic, ginger, fish sauce, brown sugar, cumin, and beef broth until smooth and uniform.
Slow-cook until fall-apart tender
  1. Place beef in the Crockpot and pour curry sauce over top, then add the bruised lemongrass.
  2. Cook on Low for 7-8 hours, until the beef is fall-apart tender and the curry looks thick and fragrant, with reduced liquid clinging to the meat.
Finish and serve
