  • 1 tbsp garlic powder
  • 2 tbsp oil
Aromatics and sauce

  • 4 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1.5 cup chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme

Method
 

Preheat and prep
  1. Preheat oven to 300°F to get ready for long, low braising and rich gravy development.
Season and sear pork chops
  1. Season pork chops with salt, pepper, and garlic powder, then sear in oil over medium-high heat for 3–4 minutes per side until browned, and set aside.
Sauté aromatics
  1. Cook onion in the same pan for 4 minutes, then add garlic and cook 30 seconds to bloom the flavor without burning.
Make the braising liquid
  1. Whisk cream of mushroom soup with chicken broth and Worcestershire until smooth, then pour into the pan to create a silky base.
Braise until fork-tender
  1. Nestle pork chops into the liquid, add thyme, cover tightly with foil, and braise in the oven for 1.5–2 hours until fork-tender and collapsing.
Finish and serve
  1. Garnish with fresh parsley and serve over mashed potatoes so the pork and gravy soak in.

Notes

For the best fall-apart texture, keep the oven at 300°F and braise covered tightly so the pork stays moist; if the gravy looks too thick near the end, add a splash of broth and simmer uncovered 5–10 minutes. Refrigerate leftovers in a sealed container up to 3–4 days; reheat gently on the stovetop or in the microwave until hot. Freezing is yes—freeze up to 2 months and thaw overnight before reheating.
