Ingredients
  

For meatballs
  • 1 lb ground beef
  • 0.25 cup breadcrumbs
  • 1 egg
  • 1 tbsp Worcestershire
  • 1 tsp garlic powder
  • 1 salt
  • 1 pepper
For French onion base
  • 3 onions large, thinly sliced
  • 4 tbsp butter
  • 2 garlic cloves, minced
  • 0.5 cup dry white wine
  • 1.5 cup beef broth
  • 1 tbsp Worcestershire
  • 1 tbsp fresh thyme
  • 2 cup Gruyere shredded
  • 1 salt to taste
  • 1 pepper to taste

Method
 

Mix and brown the meatballs
  1. Mix ground beef, breadcrumbs, egg, Worcestershire, garlic powder, salt, and pepper until evenly combined.
  2. Roll the mixture into meatballs and brown them in butter in an oven-safe skillet until golden on the outside; remove to a plate.
Caramelize the onions and build the sauce
  1. Cook onions in the same skillet over medium-low heat for 30-35 minutes, stirring occasionally, until deeply caramelized.
  2. Add garlic and fresh thyme to the onions and cook for 1-2 minutes until fragrant.
  3. Pour in the dry white wine to deglaze, scraping up browned bits from the bottom of the skillet.
  4. Add beef broth and Worcestershire, then bring to a gentle simmer and cook until the sauce tastes well combined.
Simmer, melt, and finish
  1. Nestle the browned meatballs into the caramelized onion sauce and simmer for 10 minutes, turning once so they absorb sauce.
  2. Scatter the shredded Gruyère over the skillet and broil for 3-5 minutes until golden and bubbly, with melted cheese fully covering the surface.

Notes

For the deepest onion flavor, keep the heat at medium-low and let the onions truly caramelize to a dark golden brown before adding garlic. Refrigerate leftovers in an airtight container for up to 3 days. Freezing is not recommended due to texture changes in the onions and cheese. For a lighter option, substitute leaner ground beef (90% or higher) and use reduced-fat Gruyère while keeping simmer time the same.
