seedless watermelon
  • 6 cup seedless watermelon
cucumber
  • 2 cup cucumber halved and sliced
feta cheese
  • 4 oz feta cheese crumbled
fresh mint leaves
  • 0.25 cup fresh mint leaves torn
fresh basil leaves
  • 0.25 cup fresh basil leaves torn
red onion
  • 0.25 cup red onion very thinly sliced
fresh lime juice
  • 3 tbsp fresh lime juice
honey
  • 1 tbsp honey
olive oil
  • 1 tbsp olive oil
salt
  • 0.25 tsp salt to taste
cracked black pepper
  • 0.125 tsp cracked black pepper to taste

Method
 

Make the lime-honey dressing
  1. Whisk together fresh lime juice, honey, and olive oil, then season with salt and cracked black pepper until the dressing looks evenly combined.
Assemble the salad
  1. Arrange seedless watermelon cubes and cucumber slices in a wide shallow bowl or serving platter so the vibrant red and cool green are visible.
  2. Scatter very thinly sliced red onion over the fruit and vegetables in an even layer for specks of color.
  3. Crumble feta cheese generously over the top so white bits contrast with the crimson watermelon.
  4. Drizzle the lime-honey dressing evenly over everything until each cube looks lightly glossy.
  5. Scatter torn fresh mint leaves and torn fresh basil leaves over the top for a fresh green finish.
Chill and serve
  1. Refrigerate the salad for 15 minutes and serve chilled, letting the flavors meld while the feta stays crumbly.

Notes

Pro tip: Chill the salad briefly (15 minutes) so the lime-honey dressing clings to the watermelon without turning it watery. Store covered in the refrigerator for 1–2 days; add extra mint and basil right before serving if you want maximum freshness. Freezing is not recommended for best texture. For a dairy-free option, replace feta with crumbled toasted almonds or a vegan feta-style crumble.
